Informer: ‘American cheese’ a ‘pasteurized process cheese’

How is American cheese made, and what cheeses are added to the mix?

Under federal regulations governing “pasteurized process cheese,” “cheddar cheese, washed curd cheese, colby cheese, granular cheese, or any mixture of two or more of these may be designated as ‘American cheese.’ ”

The cheeses are mixed, heated and combined with emulsifying salts — to prevent the fat from separating — and then cooled to a solid state.

Kraft Singles, the product that springs to mind for most people who hear “American cheese,” doesn’t meet the definition. Kraft American Singles is labeled a “pasteurized prepared cheese product” and contains no blended cheeses.

Its ingredients: milk, whey, milk protein concentrate, milkfat, sodium citrate, less than 2 percent of calcium phosphate, whey protein concentrate, salt, lactic acid, sorbic acid as a preservative, cheese culture, anatto and paprika extract, enzymes and vitamin D3.

First version of credit a no-interest loan

Obama had a deal right after he took office to give first-time homebuyers a $7,000 tax break. I did that and several years later I got a notice in the mail that said that was just a loan.

I’m now paying it back at $500 a year for 14 years, and it is taken directly out of my taxes. Was it truly a tax break or was it a loan?

It was a loan, as several — but, admittedly, not all — stories written on the stimulus provision pointed out.

“First-time homebuyers are eligible for a maximum credit of $7,500. But there’s a catch: The credit is actually an interest-free loan that must be paid back over 15 years,” read an Associated Press article from the paper’s Jan. 29, 2009, edition.

“If you take the full credit, you will have to pay back $500 a year. If you sell the house before the 15 years is up, the full amount will be due.”

The later versions of the tax credit require repayment if the house is sold or ceases to be the taxpayer’s principal residence within three years of receiving the credit. In those cases, the credit must be repaid on tax returns filed for the year the house was sold or ceased to be the main home.
